Peixe com tomate e basílico // Fish with tomato and basil

"Hmmmm... there's such a delicious smell in here!" he said,
"Well, it's the sauce I've made." I said "I put some of your basil leaves in it!"

And a huge prideful smile spread on his face, as he set the table.

This little story introduces this lesson about not needing many ingredients to make something very tasty.

4 filetes de peixe branco
1 tomate
2 dentes de alho
Azeite q.b.
Sal e Pimenta q.b.
Farinha q.b.
Meio copo de Água (1 dl) .
3 ou 4 folhas de basílico fresco

4 fillets of any kind of white fish
1 Tomato
2 garlic cloves
Olive oil
Salt and Pepper
Flour
Half a glass of Water (1 dl)
3 or 4 fresh basil leaves

Aquecer o azeite numa panela.

Heat the olive oil in a pan. Meanwhile, slice the garlic and mix the flour with the salt and pepper. Put the garlic in the pan and let the oil pick up a little of the flavour, while you coat the fish with the seasoned flour. Put the fish into the pan and let it fry for a few minutes on each side, until golden brown. Use the waiting time to dice the tomato (I rarely peel tomatos, I just wash them very well before using them). Take the fillets out of the pan and set them aside.
In the same pan, put the tomato and let it cook until it's completely mooshed, then add the water. By now, you can add a bit more salt and pepper, if the sauce is too bland for your taste, but I didn't have to. Put the fish back into the pan, add the basil leaves. Cover the pan and let it cook slowly for a couple more minutes, on low temperature, to allow the flavours to blend.
Serve with pasta - I used maccaroni and broccoli, seasoned with butter.
